The Cocktail Diaries: Skinny Tequila Refresher

From the Lucid Test Kitchen

If you’re like a third of the population, you woke up on New Year’s Day — most likely a tad hungover — with the resolution to either lose weight, exercise more, or lead a healthier lifestyle — heck, maybe even all three.

Sure, alcohol sounds like the devil now, as you’re babying yourself through loud noises and bright lights, but give yourself a few days and the return of your workload, and a glass of wine or whiskey to help you unwind at the end of the day will sound heaven-sent.

And then you’ll remember your resolution.

At Lucid Agency, we’re all about goal-setting. So, our goal is to help you drink more alcohol with less regret. What can we say, we’re fans of dreaming big.

Instead of cutting out alcohol completely — which seems unrealistic and, if we’re being honest, no fun at all — we have created a delicious, low calorie cocktail that will ensure you stay on track even when you go full-party-mode.

So go ahead, invite your friends over, mix up a round of this refreshing cocktail, and start planning your next hike.

Skinny Tequila Refresher

  • 2 oz. of your favorite silver tequila
  • 3 oz. coconut water with pineapple
  • 1 green apple
  • Fresh mint
  • A couple drops of agave nectar

Core the apple, then cut it in half. Set one half aside. Remove the skin from the other half and cut into cubes. Add the apple to a shaker with 3 mint leaves and a couple drops of agave nectar. Muddle the ingredients until they are thoroughly mixed. Add the tequila, coconut water, and ice and shake. If you don’t mind pulp in your drink, pour the mixture into a glass and serve! Or you can strain the concoction into a glass of ice. Slice the other half of the apple to garnish your drink.

  • If you’re not a fan of coconut water or want less calories, substitute pineapple sparking water.
  • For an equally refreshing and low-calorie version, make a real strawberry margarita. Puree one cup of strawberries in a blender with the tequila and agave nectar.
